Title: Salmon Steaks with Broccoli Sauce

6 Salmon steaks ( 6 ounces
  Each)
4tsMargarine
2tbFresh lemon juice, divided
1/2cChicken broth
1cBroccoli florets (about 1/4
  Head)
1/4cChopped onion
1 Clove garlic, minced
1/4tsSalt
1/8tsGround pepper

Preheat the oven to 375F. Arrange the salmon steraks in a shallow baking dish and dot them evenly with margarine. Sprinkle 1 tablespoon of lemon juice over them. Bake for about 20 minutes, until the fish flakes easily when pressed lightly with a fork.

Meanwhile, place the broth in a medium saucepan and bring to a boil over medium heat. Add the broccoli, onion and garlic. Cook until the broccoli is tender, about 10 minutes. Place the mixture in a blender with the remaining tablespoon of lemon juice and the salt and pepper. Process at medium speed until smooth. Serve the sauce over the salmon.

Makes 4 servings.

Per serving: 425 Calories; 40 g Protein; 27 g Fat; 4 g Carbohydrates; 65 mg Cholesterol; 415 mg Sodium.
